Carrots

Spring is here and the vegetables are growing, the flowers are popping up, and the sun is warming everything up. The life that begins showing up in March brings hope and a fresh start. So it is time to celebrate all the joy that comes with spring.


Carrots are an all year available vegetable, but when spring comes around its time to celebrate them in a delicious and sweet way. A carrot cake, although it contains vegetables is something very indulgent, a denser cake, and richer in flavor since the sugars in the carrots interact with the sugars in the cake, creating a darker color and caramelized effect throughout the cake.


My carrot cake also contains dried cranberries and large chunks of walnuts. The frosting is cream cheese and mascarpone and then each layer is filled with chopped candied ginger. The cranberries and ginger add a wonderful contrast to the sweet flavor created by the carrots.

An added carrot patch on top just makes the cake look even more like springtime is taking root.
