Time to break out the carrot cake! There is nothing quite like a great bite of carrot cake with the tang of cream cheese frosting to cut through the sweet carrots.
I enjoy carrot cake that is filled with the flavors of spring. In my opinion you should be able to see your carrots throughout the cake and there should be notes of sweet fruit as well as a hint of spice to advance the flavors.

I choose to use candied ginger to add just the right amount of warmth and spice to the sweet sugar and carrots. Dried cranberries add the final punch of tart to add a brightness to the cake.
This easter is the perfect time to indulge in a wonderful carrot cake. They can be decorated simply and with rustic flair that adds to the delight of a spring cake filled with spring fair.
